The History  of Champagne Sauces

The desert delicacies are made from recipes developed by Mabel Cahill, who founded the company in 1949. Her partner in the company and in life was her Wall Street stockbroker spouse, James. They moved to Phoenix to buy a television station, but wound up making preserves from desert fruits. It was a fortuitous move; Prickly Pear jelly, Wild Orange Marmalade, Pomegranate Jelly and Date Butter (originally date conserve) were the four original products. Other companies were making Prickly Pear Jelly in this area before the Cahill's, but the recipe Mrs. Cahill perfected is the one registered with the FDA as the national standard for Prickly Pear Jelly.
